I wouldn't limit myself to journals (although obviously they're the best option). I've published short artcles for non-specialists: try contacting newspapers etc, they all have commisoning editors who will consider freelance stuff.

The email said that the magazine is now going national, after being published in London for some years.

If you go to the link "Instructions for Authors" it tells you who to email, and the format etc.

I would be cautious about magazines - check it is peer reviewed

I did a literature review before my thesis was completed. It was very good experience, was well-received and ended up shaping a couple of my chapters really well: the ones on background and methodology. There is nothing like having peers review your chapter for you. If you don't write about your thesis in the review then you are not openning yourself up to problems. Do make sure it is a critical review though, with insights into existing gaps in the research and differences between existing work. A collection of abstracts will not be well-received. It is also a lot more work than you would think.
